If you've ever travelled as a vegetarian, you'll know it can be a struggle ensuring you get enough protein in your meals.
It's not always easy, especially when you're in unfamiliar territory. During my recent travels in Italy, I found myself in this exact situation, staying in a beautiful villa surrounded by the rustic charm of the countryside.
And as always, when travelling, with a little creativity in the kitchen, it led me to make a simple, yet delightful dish packed with the goodness of local produce that included protein and some chili to give it a kick!
