Come summer and we love indulging in some juicy, sweet mangoes. I have combined two of my favourite summer coolers to create this refreshing mango labneh/yogurt dessert – a simple no fuss summer treat. I have also used mango coulis, which further enhances the magical flavours of this dessert.

Besides being a summer favourite, mangoes also contain an abundance of vitamins, minerals, and antioxidants.

I talked about labneh in my previous recipe. It is thickened yoghurt similar in texture to cream cheese, made from strained yogurt and very popular in Middle Eastern cuisine. At about half the fat and calories of standard cream cheese, it is a healthier alternative and has good-for-your-gut probiotics.

There are three components to this dish:

1) homemade labneh sweetened with sugar

2) mango coulis with mint leaves

3) fresh chopped mangoes

Assembly Option 1

  1. As seen in the photo – spread the labneh in a serving dish, scatter some mint leaves.

  2. Add few spoons of the mango coulis on top; mix lightly.

  3. Then put the chopped mango pieces on top.

  4. Top with remaining mango coulis

  5. Garnish with lime zest, mint leaves and orange rind
