Arbinder Dugal is BBC's MasterChef Professionals UK's 2019 Semi Finalist. Last year, he was appointed as Head Chef for the British Asian Trust at a royal charity event at Buckingham Palace, London.
As part of his special series for iGlobal, he will share some innovative fusion recipes. This healthy protein recipe was inspired by his early career working the breakfast shift at the Renaissance Mumbai Convention Centre Hotel in Powai, Mumbai.
Quinoa is not only a great source of protein, it is also high in fibre, magnesium, B vitamins, iron, potassium, calcium and phosphorus, and it is one of the few plant foods that contains a sufficient amount of all nine essential amino acids. It is an added bonus that it is also gluten free.
As well as being a nutritious recipe, it is also delicious and very filling. This would make a perfect lunch time treat to keep you full and energised for the rest of the day.
