Poonam Ball, the Group Executive Creative Chef and Marketing Director of British Indian catering giant Madhu’s, recently joined iGlobal to showcase her unique touch with a quick and easy Chickpea and Burrata Salad. Follow the step-by-step recipe in this video to create your very own tangy twist to the more traditional Indian chana (chickpea) chaat.

“It’s very easy, everyone can do this at home,” she shares.

Proud to be a family-run business, Madhu's has been at the heart of Ball’s family for four generations and is today among the most luxurious names associated with quality Indian cuisine in the UK. It all began in Nairobi, Kenya, where Bishan Das Anand in 1935 started a catering business. He later opened the legendary Brilliant Hotel in 1957 and established himself as a successful name in the industry.

Inspired by the work of their grandfather, Madhu's Brilliant was opened in 1980 by Sanjay and Sanjeev Anand, aged 17 and 16 respectively. The name Madhu's was derived from the nickname of their father Jagdish Kumar Anand. Their mother Krishna Kumari Anand, also the Head Chef, was instrumental in the success of Madhu's Brilliant. In 2004, the company re-branded and transformed into what is popularly known as Madhu's today.

The Group’s passion for gourmet supremacy has driven their restaurants to excellence. In addition to winning coveted awards and accolades, Madhu’s has been on an ever-expanding path. As for Poonam Ball, she learnt her craft through family recipes passed down by her parents and delights in sharing and sprinkling some of that magic around. She has led Madhu’s to cater private events at Buckingham Palace, Windsor Castle, 10 Downing Street, and much, much more.

“The restaurant and catering business is going from strength to strength – we have restaurants now in Mayfair, Grove, Southall, Sheraton; there is another leg called the brasserie with two sites in Richmond and Harvey Nichols and we also started our new international restaurant two years ago in Istanbul,” shared Ball, during the recent India Global Forum (IGF) in London.
