Beetroot Raita is a fresh, fun, yummy and healthy dish made with grated beetroots, yoghurt, and seasonings.
The tadka/tempering on the top is completely optional but highly recommended. The raita works well as a side dish with Indian dishes as well as a part of a mezze platter or as an accompaniment to roast meat and veggies.
Being loaded with almost all the essential nutrients such as fibre, folate, manganese, iron and Vitamin C, beetroots are known to lower the blood pressure level while improving the blood flow and boosting the immunity.
Yoghurt is a superfood which aids in easing out the digestive system and is high in protein, making this dish a power combo!
Take small pan, heat oil. Add the mustard seeds and curry leaves till they splutter.
Pour this on top of the yoghurt and serve.
