A delicious simple crunchy salad that is bursting with flavours. This is a regular in my kitchen because it is so easy to prepare, is a good balance of yumminess and textures and has a real oomph to it from the chillies and the garlic.
The tangy dressing soaks into each bite, which is punctuated with pops of crunchiness from the peanuts.
It is versatile in the sense that you can add shredded red cabbage, some red and green peppers too or even some cooked shredded chicken or tofu.
It has a lot of Vitamin C and full of fibre – both needed to keeping us up and running.
Serve this salad as a light lunch or pair it with grilled chicken, fish cakes, tofu kebabs for a more substantial meal.
